La Divisi\u00f3 de Food Processing Aids testa i desenvolupa solucions destinades a millorar l\u2019acabat dels aliments.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Un dels aliments que es beneficien de les solucions de Concentrol s\u00f3n els formatges. Concretament, els recobriments de formatge desenvolupats a Concentrol ofereixen efic\u00e0cia antif\u00fangica enfront del fong <\/span><i><span style=\"font-weight: 400;\">Penicillium discolor<\/span><\/i><span style=\"font-weight: 400;\"> endarrerint la seva aparici\u00f3 en l\u2019aliment.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Concentrol ha realitzat un estudi per determinar si en els recobriments que contenen els conservants pimaricina i \u00e0cid s\u00f2rbic, existeix una sinergia de la seva efic\u00e0cia antif\u00fangica enfront del fong Penicillium discolor. \u00c9s a dir, si s\u2019observa un increment de l\u2019efic\u00e0cia antif\u00fangica dels nostres recobriments contra aquest fong quan actuen conjuntament la pimaricina i l\u2019\u00e0cid s\u00f2rbic.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Per dur a terme aquest estudi s\u2019ha seguit la mateixa metodologia que a l\u2019<\/span><a href=\"https:\/\/concentrol.com\/ca\/nova-metodologia-per-la-determinacio-de-leficacia-antifungica-dels-conservants-pimaricina-sorbats-i-propionats-en-recobriments-de-formatge-part-1\/\"><span style=\"font-weight: 400;\">estudi anterior<\/span><\/a><span style=\"font-weight: 400;\"> emprant una an\u00e0lisi <\/span><b>microbiol\u00f2gica quantitativa<\/b><span style=\"font-weight: 400;\"> sobre formatge. Amb aquesta an\u00e0lisi es realitza el recompte d\u2019unitats formadores de col\u00f2nies del fong <\/span><i><span style=\"font-weight: 400;\">Penicillium discolor, <\/span><\/i><span style=\"font-weight: 400;\">que apareixen a les mostres de formatge una vegada s\u2019ha sembrat el fong i s\u2019ha aplicat el nostre recobriment.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A continuaci\u00f3, es presenten les taules 1, 2 i 3 en les quals es mostra l&#8217;evoluci\u00f3 del creixement del fong <\/span><i><span style=\"font-weight: 400;\">Penicillium discolor<\/span><\/i><span style=\"font-weight: 400;\"> en les mostres de formatge, en les quals s&#8217;ha aplicat el recobriment de Concentrol amb diverses combinacions i concentracions dels dos conservants. En concret, l&#8217;evoluci\u00f3 del creixement del fong es mostra des de la seva aparici\u00f3, el dia 5, fins al dia 14 despr\u00e9s de la seva sembra.\u00a0<\/span><\/p>\n<h5><span style=\"font-weight: 400;\">Taula 1. S\u2019observa el mateix efecte quan s\u2019augmenta la quantitat de pimaricina en un recobriment que cont\u00e9 una concentraci\u00f3 determinada d\u2019\u00e0cid s\u00f2rbic. Tenint en compte aquest fet, podem dir que existeix una certa sinergia entre els dos conservants enfront del fong <\/span><i><span style=\"font-weight: 400;\">Penicillium discolor.<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Aquesta nova metodologia que ha creat Concentrol per determinar <\/span><span style=\"font-weight: 400;\">l&#8217;efic\u00e0cia de l&#8217;activitat antif\u00fangica dels recobriments conservants sobre el formatge t\u00e9 una gran rellev\u00e0ncia internacional, i ha captat molt d\u2019inter\u00e8s en la ind\u00fastria formatgera. Per aquest motiu s\u2019est\u00e0 estudiant la possibilitat d\u2019incorporar aquest m\u00e8tode en estudis posteriors amb altres fongs que tinguin una pr\u00e8via
